Rice with artichokes and chorizo
Ingredients
- 4 cups of bomba rice
- 10 cups of broth made from boiling some vegetables
- 1 red onion
- 2 plum tomatoes
- 5oz of Chorizo Palacios
- 9oz of artichoke hearts
- Extra virgin olive oil
- Salt
Rice is the perfect base for any meal because it provides very complete dishes from a nutritional point of view. You just have to know how to choose the ingredients that go with it. This time, we present a recipe that combines the goodness of vegetables with the unmistakable taste of Chorizo Palacios.
METHOD
- Chop the onion and tomatoes. Finely chop the chorizo.
- In this case we use canned artichokes, so take them out of the can, rinse with water and drain well.
- That's all the ingredients ready; now let's make the sauce base.
- Brown the onion in a skillet with hot oil. Next add the finely chopped chorizo. Stir occasionally. When it is well cooked add the tomato, stir and sauté.
- Add the rice and mix everything well. Pour in the vegetable broth and cook over a high heat for about 3-4 minutes. Then lower the heat a little and leave to simmer for another 15 minutes.
- Once the rice has absorbed all the broth, remove from the heat and cover with a clean cloth. Leave to stand for about 10 minutes and serve.
NUTRITIONAL COMMENT
The artichoke is a vegetable with a high fiber and inulin content, both of which are important for the good functioning of the digestive system and intestinal microbiota.
Like all vegetables, it provides few calories and is high in protective nutrients (potassium and phosphorus) and plant sterols that decrease the absorption of cholesterol.
