Potato, zucchini and chorizo omelet with peppers
Ingredients
- Potato
- 8 eggs
- 2 potatoes
- 1 zucchini
- 1 scallion
- 1 clove of garlic
- 100 g of chorizo Palacios
- 2-3 green peppers
- 1 red pepper
- Extra virgin olive oil
- Salt
- Parsley
To the traditional potato omelet we add ingredients that are not only tasty, but also full of recommended nutrients for very active lifestyles.
Step 1: Chop the vegetables.
Peel the spring onion and the potatoes and cut them into quarters. Wash the zucchini and chop in the same way. Finely chop the clove of garlic.
Step 2: Poach the vegetables.
Heat plenty of oil in a large skillet. Add the vegetables and season. Fry gently until they are done.
Step 3: Add the chorizo.
Remove the skin from the chorizo, cut it into quarters and add them to the skillet. Lightly fry briefly. Remove the vegetables and drain well.
Step 4: Fry the peppers.
Peel the red pepper and cut it into thick strips of about 5 x 2 cm. Chop the green peppers in the same way. Sauté in a skillet with oil. Season.
Step 5: Cook the omelets.
Beat the eggs 2 by 2, 4 by 4 or all 8 together. Divide or add the vegetables with chorizo and mix well. Heat a skillet with a little oil, pour the mixture (or part of the mixture) and cook the omelet(s).
Serve the omelets and accompany them with the sautéed peppers.
