Ingredients

- 5 medium carrots
- 600g of mushrooms (wild mushrooms are also fine)
- 2 shallots (or 1 medium onion)
- Black pepper
- Salt
- Extra virgin olive oil
- Chorizo Palacios
Would you like a healthy, delicious and simple starter? This recipe combines the sweetness of the carrot with the taste and texture of the mushrooms. Finally, there's nothing like a few pieces of chorizo to make it irresistible.
Preparation
Clean the mushrooms well with a cloth and remove the stalk. Chop them into halves or quarters, depending on the size and your taste. Next, peel the carrots, wash them and grate them in the grater (accessory for the hand mixer). Chop the shallots very finely.
Once this is ready, place a skillet on the stovetop, with a drizzle of olive oil and add the shallots. Cook until they change color and then lower the heat and let the shallots slowly caramelize, stirring continuously.
When it is almost ready, add the mushrooms, the grated carrot and a little salt and pepper. Raise the heat to medium and let the carrots and mushrooms cook, stirring from time to time.
The special touch to make sure everyone will ask you for the recipe is to add a few pieces of Palacios chorizo in this last step of the preparation. Leave them to sweat and cook together with the vegetables.
