Egg, French Fries & Chistorra

Ingredients

  • 1 Quijote Chistorra
  • 2 Big potatoes
  • 2 eggs
  • 3.5oz of dates
  • Extra virgin olive oil
  • Salt

Chop the chistorra and bone the dates. Sauté everything in a frying pan, then transfer the stir fry to the blender glass, add a splash of olive oil and grind.

METHOD

Cook the eggs in the steam oven at 145ºF for 18 minutes.

Peel the potatoes, cut them and fry them in a pan with plenty of olive oil for 8-10 minutes. Drain on absorbent kitchen paper and allow to cool.

At the last minute, fry them in very hot oil until smooth and crisp. Season them.

Put a heap of mashed chistorra at the bottom of the plate. Place the egg and potatoes around it

NUTRITIONAL COMMENT

It is a dish with a high caloric value for its content in animal fats, but it is also true that it provides protein, vitamins and minerals.
