Chorizo croquettes
Ingredients
- 200 g of fresh chorizo
- 1 l of milk
- Flour
- 3 eggs
- Breadcrumbs
- Extra virgin olive oil
- Salt
- Parsley
- To decorate (optional) 6 wafers that look like bills
If you still haven't tried chorizo croquettes, you don't know what you're missing. Take note.
Preparation:
- Remove the casing from the chorizo, crumble and fry over a low heat in a pan without oil. Remove and drain with a strainer. Set aside.
- To make the white sauce, put a little oil in a pan, add 100 grams of flour and fry gently. Mix well with a whisk.
- Slowly add the milk, season and simmer while stirring continuously. Add the chorizo and mix well. Cook over a low heat for at least 10 minutes.
- Place the mixture in a deep bowl and leave to cool. Take small portions, shape them into croquettes and roll in flour, beaten egg and breadcrumbs.
- Fry in a frying pan with plenty of hot oil. Drain on a plate lined with paper towels and serve.
