Chorizo burrito
Ingredients
- 500 g of Palacios chorizo
- 300 g of red onion
- Diced
- 1 jalapeño
- Diced without seeds
- 4 eggs
- ½ teaspoon of salt
- ¼ teaspoon of pepper
- 1 tablespoon of olive oil
- 4 flour tortillas
- 1 avocado - diced
- Cilantro
- ½ cup of grated cheese
- 2 tablespoons of salsa verde
A burrito filled with the full flavor of Palacios chorizo.
Preparation:
- Heat a large frying pan over a high heat and add the chorizo. Cook until completely cooked and brown, about 5 to 6 minutes.
- Add the red onion and cook until tender. Add the jalapeño and turn off the heat. Remove the chorizo mixture from the frying pan and set aside.
- Beat the eggs with salt and pepper.
- Heat the same pan over a medium heat and add olive oil.
- Add the beaten eggs and remove from the pan after about 1 or 2 minutes.
- Toast the tortilla in a clean frying pan until it is hot.
- Fill with the mixture of chorizo, scrambled eggs, avocado, cilantro, grated cheese and salsa verde. Repeat with the remaining tortillas.
- For each wrap, fold two ends over the filling then hermetically roll, finishing off with the join underneath.
