Chorizo and cheese quesadillas

Ingredients

  • 4 corn or wheat tortillas
  • 1 scallion
  • 100 g of chorizo
  • 100 g of grated mozzarella
  • 100 g of grated cheddar
  • Green chilies
  • Chopped

The quesadilla is a very traditional dish in Mexico that can be prepared in very different ways. We propose a recipe that combines different cheeses with chorizo. Delicious.

Preparation:

  • Remove the skin from the chorizo and chop into small pieces.
  • In a bowl, mix the chorizo, grated cheeses, chopped scallion, and the green chilies.
  • Place some of the mixture on a tortilla and wrap.
  • In a frying pan, brown the tortilla for a couple of minutes on each side. Squeeze.
  • Place on a plate and serve.
