Chicken & chorizo jambalaya

1 tablespoon of olive oil

2 chicken breasts

1 onion

1 red pepper

2 cloves of garlic

75 g of Palacios chorizo

1 tablespoon of Cajun seasoning

250 g of long-grain rice

400 ml tomato sauce

350 g of chicken
Preparation:
- Heat the oil in a frying pan with a cover, and fry the chicken for 5-8 minutes until golden. Remove and put to one side.
- Chop the onion and lightly fry for 3-4 minutes until soft.
- Then add the pepper, garlic, chorizo and Cajun seasoning, and cook for a further 5 minutes.
- Stir the chicken with the rice, add the tomato sauce and the stock.
- Cover and simmer for 20-25 minutes until the rice is cooked.
- Serve.
