Aubergine stuffed with cheese and "Palacios" chorizo (spicy pork sausage)

Ingredients

  • 2-4 aubergines (eggplant)
  • 2 leeks
  • 1 spring onion
  • 2 garlic cloves
  • Cheese
  • ½ PALACIOS "chorizo" (spicy pork sausage)
  • Extra virgin olive oil
  • Salt

This tasty recipe will delight the whole family. It is an informal and original way of introducing vegetables into their diet and which also adds fiber, vitamins, antioxidants minerals and proteins.

Step 1: Empty the inside of the aubergines and cook the skins.

Cut the aubergine in half and scrape out the flesh using a teaspoon being careful not to break them. Boil the skins.

Step 2: Prepare the fried mix and add the flesh of the aubergine

Finely chop the flesh of the aubergine Finely chop the spring onion, leeks and garlic and fry in a frying pan with a splash of oil. Add the flesh of the aubergine and cook well. Put the mixture into a bowl.

Step 3: Fill the aubergine

Dice the cheese and the Palacios chorizo and add to the bowl. Mix well and fill the aubergines.

Step 4: Bake the aubergine

Place the stuffed aubergines on to a baking tray and bake at 180º for 10 minutes.
