Meat and chorizo lasagna
Ingredients
- 10 sheets precooked pasta
- 400ml tin crushed tomato (better than fried)
- 1/2 bag grated Parmesan cheese
- 10 fresh mushrooms
- 17.6oz minced beef
- 1 green pepper
- 1 red pepper
- 1 onion finely chopped
- 3 garlic cloves
- 1/2 Palacios Chorizo chopped
- 1 pinch of salt and black pepper
- 2 tbsps. butter
- 3 slices of onion chopped

METHOD:
As the pasta sheets are pre-cooked, this saves cooking time so you can begin to prepare the meat sauce.
In a frying pan with a little extra virgin olive oil, fry 2 of the chopped garlic cloves until golden. Next, add the half chorizo finely chopped and fry for another 5 minutes.
Then add all the chopped ingredients: onion, pepper and mushrooms.
Use another frying-pan to prepare the beef. With a splash of olive oil, fry the remaining chopped garlic clove and the 3 slices of onion, also chopped. Next, add the minced beef flavored with salt and pepper and stir well.
Once the meat is golden, add the previously-prepared chorizo sauce and crushed tomato. Stir well and cook for about 10 minutes under a medium heat.
In a baking tray lined with butter, cover the bottom with half of the pasta sheets. Then cover the sheets with the meat sauce. (Basically you can use all the sauce but if there is any left over, keep for another recipe). Spread well and cover with the remaining pasta sheets. Sprinkle the Parmesan cheese on top.
Preheat the oven to 425 ºF for 10 minutes and cook the lasagna for 30 minutes approximately, until the cheese is golden. Leave to settle and then serve.
