Chicken and chorizo paella
Ingredients
- 250 g of rice
- 3 cups (750 ml) of boiling water
- 85 g of chorizo in fine slices
- 350 g of skinless chicken breast fillets
- 1 tablespoon of olive oil
- 1 large onion (chopped)
- 2 celery sticks (chopped)
- 2 cloves of garlic (crushed)
- 1 red pepper (without seeds - chopped)
- 1 green pepper (without seeds - chopped)
- 4 tomatoes (finely chopped)
- 2 bay leaves
- 2 sprigs of fresh thyme
- 1 beef stock cube
One of the most popular dishes in Spanish cuisine is the Paella. This is an easy to prepare meal with the delicious and juicy addition of Chorizo Palacios.
METHOD:
1. Cut the chicken breast into small pieces and fry in a frying pan with a tablespoon of oil until golden brown. Add the sliced chorizo and lightly brown it Remove the chicken and chorizo from frying pan and put to one side.
2. Add the onion, celery, garlic and peppers to the oil left in the frying pan. Cook, stirring continuously for 5 minutes, until the vegetables are tender.
3. Add to the vegetables 3 cups (750 ml) of boiling water, the rice, tomatoes, bay leaf, thyme and the beef stock cube. Add the chicken and chorizo and pour in the water. Bring to the boil and lower the heat to low, cover and cook for 25 minutes.
4. Serve.
